Chocolate Zucchini Cake



The garden is in full bloom, and Dad keeps bringing in mammoth-sized zucchinis and insists we do something with them.  Since the neighbors don't want any more, we've been forced to dig through recipes trying to find something to use them in.  I'm not much of a veggie person, but that's the beauty of this cake....all you taste is its chocolaty goodness!



First thing you need: an awesome friend that's willing to get covered in flour with you!

Next, gather your ingredients: flour, cocoa powder, salt, baking soda, sugar, butter, vegetable oil, eggs, vanilla, buttermilk, zucchini, and chocolate chips.

Mix together flour, cocoa powder, salt, and baking soda in a large bowl.

This next step isn't photographed because I was being distracted by the previously mentioned awesome friend.  (So it's her fault, not mine.)
In the mixer's bowl, beat together butter, sugar, and vegetable oil.  Then add eggs one at a time to the mixture, followed by the vanilla.

Grab your zucchini, cut off the ends, and start grating it.

This is how I do it - grate a pile, then throw it in your measuring cup.  So on and so forth until you have....

Next, alternately add the dry ingredient mixture and the buttermilk to the sugar mixture. (Adding the dry ingredients and the buttermilk at the same time keeps the batter from getting too dry.)

Before adding the zucchini - it should have the consistency of a normal cake batter.

After adding the zucchini - obviously, a lot more liquidy. Yes, I said liquidy.

Butter and flour a 9x13 glass baking dish, and pour the batter into it.

Don't forget to lick the bowl!

 Sprinkle chocolate chips on top. (I use anywhere from 3/4 to a whole bag, but you can use less if you want it to be "healthier")

I used the mini chocolate chips, but again, if you'd rather use the big ones, go for it!

Bake in a 325° oven.

Set your timer for 50 minutes, and wait for your house to be filled with delicious aromas!

You only get one photo of the finish product.  It disappeared off the plate before I could snap another one!


 Recipe: Chocolate Zucchini Cake
  • 2 ¼ cups flour
  • ½ cup of cocoa powder
  • 1 tsp. of salt
  • 1 tsp. of baking soda
  • 1 ¾ cup of sugar
  • 1 stick of butter
  • ½ cup of vegetable oil
  • 2 large eggs
  • 1 tsp. of vanilla
  • ½ of buttermilk
  • 2 overflowing cups of grated zucchini
  • 1 bag of semi-sweet chocolate chips

Mix together flour, cocoa powder, salt and baking soda in large bowl.  In another bowl, beat together sugar, butter, and vegetable oil.  Add eggs one at a time to sugar mixture, followed by vanilla.  Alternately add dry ingredients and buttermilk.  Lastly mix in the grated zucchini.

Pour into a 9x13 buttered and floured glass baking dish.  Sprinkle chocolate chips on top.

Bake in a 325° oven for 50 minutes.
